Preludio × Il Borgo

On 17 October 2019, Preludio will welcome balsamic producer Cristina Crotti of Il Borgo del Balsamico for a one night only 8-course degustation dinner. The menu will showcase the use of Il Borgo’s range of balsamic vinegars and condiments in exciting ways, piquing the imaginations of diners on how the complex flavours of this Italian nectar can be amplified and extended across savouries, pastry, and beverages.

Located in the picturesque province of Reggio Emilia, Il Borgo del Balsamico was founded by Cristina Crotti and her sister to further their father’s collection of aged barrels of balsamic vinegars. The estate houses an impressive portfolio of traditional Reggio Emilia D.O.P. balsamic vinegars aged between 12 to 25 years in handcrafted wood casks; Modena I.G.P. balsamic vinegars; and condiments that have been innovatively enriched with fruit juices, all of which are made from the Lambrusco and Spergola grapes native to the region.

In this dinner, Chef Fernando and Cristina will work in tandem to interpret Preludio’s prevailing Monochrome chapter featuring Il Borgo’s range of balsamic vinegars. Apart from new creations, the menu will also feature La Cortina – now a signature at Preludio – where butternut squash agnolotti is drizzled with Il Borgo’s traditional 25 year old balsamic vinegar. As part of the experience, the balsamic is also swirled around in an elegant stem glass designed by Cristina, let to breathe, then presented to diners to experience the balsamic’s bouquet of floral scents. The name of the dish references the room which Chef Fernando stayed in when he visited Il Borgo.
